Chili Verde - cooking recipe

Ingredients
    3 Tbsp. bacon fat or vegetable oil
    1 c. coarsely chopped onions
    2 lb. lean pork, cut into 1/2 inch cubes
    2 Tbsp. flour
    1/2 tsp. ground cumin
    2 garlic cloves, minced
    10 Anaheim chilies, roasted, peeled, cored, seeded and diced
    3 c. chicken stock
    salt and pepper to taste
Preparation
    In large pot heat bacon fat; saute onions until soft.
    Add pork cubes.
    Cook for 5 minutes.
    Sprinkle flour over pork and onions, cook until the pork is browned and onions are golden.
    Stir in the cumin, garlic and chilies, mixing well.
    Add the chicken stock and stir.
    Add salt and pepper.
    Lower heat and simmer, uncovered, until meat is tender (about 1 1/2 to 2 hours).
    Serve with warm tortillas.
