Morning Glory Muffins - cooking recipe

Ingredients
    3 large eggs
    2/3 c. oil
    1 tsp. almond flavoring
    2 c. flour
    2 tsp. baking soda
    1 tsp. cinnamon
    1 tsp. ginger
    1/2 tsp. salt
    2 c. grated carrots
    1 large tart apple
    1/2 c. raisins
    1/2 c. chopped nuts
    1/2 c. coconut
Preparation
    Preheat oven to 400\u00b0.
    Beat eggs, oil and almond flavoring with wire whisk and set aside.
    Mix dry ingredients in large mixing bowl.
    Add peeled and grated carrots, apple (peeled and grated), raisins, nuts and coconut.
    Add egg mixture and stir until moistened.
    Put in prepared muffin pan and bake 15 to 20 minutes.
    Makes 18 muffins.
