Frog'S Eye Salad(May Be Prepared Fat Free) - cooking recipe
Ingredients

1 c. sugar or 1/2 c. honey
2 Tbsp. flour
1/2 tsp. salt
1 3/4 c. pineapple juice (save juice from pineapple, add water to make 1 3/4 c.)
2 beaten eggs (or 2 beaten egg whites)
1 Tbsp. lemon juice
1 (1 lb.) pkg. Acini De Pepe (uncooked)
3 (11 oz.) cans Mandarin oranges, drained
2 (20 oz.) cans pineapple chunks, drained
1 pkg. Dream Whip, whipped
1 c. miniature marshmallows
1 c. flaked coconut
Preparation

Combine sugar, flour and salt.
(If using honey, omit sugar from this first step and add the honey with pineapple juice.) Stir in pineapple juice and eggs.
Cook, stirring constantly until thickened.
Add lemon juice; cool to room temperature.
Prepare Acini De Pepe; mix well and refrigerate overnight or at least 4 hours in airtight container.
Add remaining ingredients and mix thoroughly.
Refrigerate in airtight container until thoroughly chilled.
Refrigerate leftovers.
(Marshmallows and coconut can be optional.)
Yields 25 servings.
