Spinach-Stuffed Potatoes(Reduced Fat) - cooking recipe

Ingredients
    2 small baking potatoes
    1/2 (10 oz.) pkg. frozen chopped spinach
    1/4 c. Parmesan cheese
    2 Tbsp. nonfat sour cream
    2 Tbsp. diced pimento
    1 Tbsp. reduced calorie margarine
    1 Tbsp. chopped green onions
    1 clove garlic, crushed
    dash of red pepper
Preparation
    Prick potatoes several times and bake at 400\u00b0 for 45 minutes until soft.
    Cool slightly; cut potatoes in half lengthwise and scoop out potato pulp leaving 1/4 inch shells.
    Place pulp in bowl, mash until smooth.
    Add spinach, 3 tablespoons cheese and next 6 ingredients.
    Stir.
    Fill potato shells with spinach mix. Sprinkle with remaining cheese.
    Place on baking dish.
    Bake at 350\u00b0 for 30 minutes.
    Yields 4 servings.
