Fried Eggplant - cooking recipe

Ingredients
    1 medium sized eggplant
    1/2 tsp. salt
    1/2 tsp. pepper
    1 c. all-purpose flour
    oil (enough to make 1 inch deep in skillet)
Preparation
    Peel and slice eggplant.
    Mix flour, salt and pepper.
    Cover eggplant with flour mixture.
    Drop into hot skillet of oil and fry until brown on one side.
    Turn and fry until crisp; remove from oil and drain.
    Garnish with sliced red ripe tomatoes.
