Microwave Peanut Brittle - cooking recipe
Ingredients

1 c. sugar
1/2 c. white corn syrup
1 c. dry roasted peanuts
1 Tbsp. margarine
1 tsp. vanilla
1 tsp. baking soda
Preparation

Place sugar and corn syrup in a 2-quart microwave-safe bowl. Cook on High for 3 1/2 minutes.
Stir in peanuts.
Cook on High for 3 1/2 minutes.
Add margarine and vanilla.
Cook on High for 1 1/2 minutes.
Add baking soda and stir gently, until mixture is light and foamy.
Pour onto nonstick cookie sheet and spread evenly.
Let cool for one hour.
When hard, break into bite size pieces.
Makes 1 pound.
