Exotic Chicken Salad - cooking recipe

Ingredients
    4 to 6 lb. cooked chicken breasts (12 breasts), cubed (2 qt. cubed turkey can be used)
    2 (12 oz.) cans water chestnuts, drained
    2 c. finely chopped celery
    3 c. toasted slivered almonds, divided into 2 c. and 1 c.
    3 c. mayonnaise
    2 Tbsp. lemon juice (fresh)
    1 Tbsp. curry powder
    2 Tbsp. soy sauce
    1 (20 oz.) can pineapple chunks, drained
    1 lb. fresh seedless grapes or 1 (16 oz.) can grapes, drained
Preparation
    Wash grapes; dry.
    Dice water chestnuts.
    Mix with chicken; add celery, grapes and 2 cups almonds.
    Blend mayonnaise, lemon, curry and soy sauce.
    Combine with chicken mixture and chill for several hours in large glass or steel bowl.
    Place serving on lettuce leaf; sprinkle each with reserved cup of almonds and pineapple chunks.
    Serves 12.
