Banana Muffins - cooking recipe

Ingredients
    3 to 4 bananas, mashed
    1/3 c. sugar
    1/4 c. safflower oil
    1/2 tsp. vanilla extract
    1 1/4 c. brown rice flour
    1 tsp. baking soda
    1 tsp. xanthan gum
Preparation
    In large bowl, mix bananas, sugar and oil together well. Add vanilla, brown rice flour, baking soda and xanthan gum; mix well. Pour into regular size or mini muffin pans and bake at 325\u00b0 for 25 minutes.
