Top Of The Stove Rice Pudding - cooking recipe

Ingredients
    1 c. Minute rice
    1 qt. milk
    1 c. sugar
    1/2 tsp. salt
    1 (12 oz.) can evaporated milk
    3 eggs
    1 tsp. vanilla
Preparation
    Place rice, milk, salt and sugar in a heavy saucepan; mix. Bring to a boil, lower heat and simmer for 1 1/2 hours.
    Stir frequently.
    Mix evaporated milk and eggs with beater.
    Add to rice mixture.
    Stirring constantly, bring rapidly to a rolling boil and turn off heat.
    Stir in vanilla.
    Pour into Pyrex dish. Sprinkle liberally with nutmeg.
    Let stand until set.
    Chill.
