Pumpkin Spice Drop Cookies - cooking recipe
Ingredients

1 c. shortening
2 c. brown sugar
2 eggs
1/2 c. cold coffee
3 1/2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. ginger
20 oz. can pumpkin pie filling
1 c. raisins
1/4 c. chopped walnuts
Preparation

In a large bowl, cream the shortening and brown sugar.
Add eggs and mix well.
Blend well the flour, soda, salt, nutmeg, cinnamon and ginger.
Stir coffee and dry ingredients into shortening mixture.
Add pie filling, raisins and nuts.
Mix thoroughly.
Refrigerate 1 hour.
Drop by teaspoons onto greased cookie sheet.
Bake at 375\u00b0 for 12 to 15 minutes.
