Red Beans And Rice - cooking recipe
Ingredients

1 lb. dry red beans
1/2 lb. salt pork
3 c. onions
1 bunch green onions
1 c. fresh parsley
1 c. green pepper, chopped
2 cloves garlic
1 Tbsp. salt
1 tsp. red pepper
1 tsp. black pepper
3 dashes hot sauce
1 Tbsp. Worcestershire sauce
1/4 tsp. oregano
1/4 tsp. thyme
2 lb. sausage
hot cooked rice
Preparation

Soak beans overnight for 4 to 6 hours. Drain beans, rinse and place in large pot.
Cover with water and add diced salt pork. Cook 45 minutes.
Add remaining ingredients, except rice.
Simmer until beans are tender, a couple of hours.
May have to add water throughout cooking period.
Serve over hot cooked rice.
