Ingredients

1 Tbsp. butter
1 tsp. curry powder
2 c. water
2 chicken broth cubes
1 c. uncooked rice
1 c. coconut milk
1/3 c. golden raisins
sliced onions, fried
Preparation

Melt butter in 2-quart saucepan over medium heat. Stir in curry powder. Add water and broth cubes and bring to a boil. Add rice, coconut milk and raisins. Stir to blend.
Return to boil and then reduce heat.
Cover and simmer until rice is tender and liquid is absorbed.
Put into a serving dish and garnish with fried onions.
