Make Ahead Barbecue - cooking recipe

Ingredients
    4 to 5 lb. Boston butt or fresh ham
    1 large onion
    3 Tbsp. brown sugar
    3 Tbsp. dry mustard
    1/4 tsp. red pepper
    1/4 tsp. black pepper
    1 c. vinegar
    1 1/2 c. water
    1/2 c. ketchup
    1/2 c. Worcestershire sauce
    1 tsp. salt
Preparation
    Put meat in roaster.
    Mix onion, sugar, mustard, pepper, vinegar, water, ketchup, Worcestershire sauce and salt.
    Pour over meat.
    Cover.
    Cook in a 325\u00b0 oven for 5 to 6 hours until meat is very tender (falls off the bone).
    Let meat and drippings become cold.
    Remove all fat.
    Chop meat and reheat in sauce.
    May be frozen.
