Kartoffel (Potato) Latkes - cooking recipe

Ingredients
    4 medium sized raw potatoes, grated
    1 c. mashed cooked potatoes
    2 eggs, well beaten
    salt and white pepper to taste
    fat for frying
Preparation
    Press out the liquid from the grated potatoes and discard. In a medium size bowl, combine the grated potatoes with the mashed potatoes, eggs, salt and pepper.
    Shape the mixture into the desired size pancakes and fry in hot fat in a large skillet over medium-high heat until brown and crisp on both sides.
    Drain on paper towels.
    Serves 4 to 5.
