Mexican Rice And Fried Plantains - cooking recipe

Ingredients
    1/4 c. plus 1/3 c. peanut oil
    1 1/2 c. raw long grain white rice
    1 large ripe tomato, peeled and seeded
    1 small yellow onion, chopped
    1 clove garlic
    3 1/2 c. water
    1 1/2 tsp. salt
    3 ripe plantains, sliced diagonally
Preparation
    In a medium saucepan, heat 1/4 cup oil over medium heat.
    Add rice; stir to coat.
    Saute rice until pale golden, about 10 minutes. Spoon off and reserve oil.
