Freeda Midkiff'S Clam Chowder - cooking recipe

Ingredients
    1/2 c. finely cut salt pork or bacon
    1 onion, chopped fine
    4 c. potatoes, cut in cubes
    2 Tbsp. butter
    4 Tbsp. flour
    1 qt. milk
    1 tsp. salt
    1 tsp. pepper
    1 tsp. thyme
    1 pt. clams, cut in small pieces or 2 cans clam bits
    6 crackers (Pilot biscuits often preferred)
Preparation
    Place salt pork or bacon and onion in a pan and cook until onion is a golden brown.
    Add 2 cups of water (clam liquid and enough water to make 2 cups) and potatoes.
    Simmer until potatoes are tender.
    Melt butter; stir in flour, milk and seasonings. Cook 5 minutes, stirring constantly.
    Combine mixture; add clams. Heat; do not boil.
    Add broken crackers.
    Makes 8 servings.
