Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant*
    1 medium onion
    saltine crackers
    4 Tbsp. margarine
    4 Tbsp. flour
    1 tsp. salt
    1/2 tsp. pepper
    2 c. milk
Preparation
    *Zucchini or summer squash may be substituted for eggplant.
