Rhubarb Cake - cooking recipe

Ingredients
    2 c. flour
    1 tsp. baking soda
    1/4 tsp. salt
    1 1/2 c. brown sugar
    1/2 c. margarine
    1 egg
    1 c. milk
    1 tsp. vanilla
    2 1/2 c. rhubarb, diced
    1/2 c. sugar
    1 tsp. cinnamon
Preparation
    Mix flour, soda and salt; set aside.
    In large mixing bowl, cream margarine and brown sugar until fluffy.
    Beat in egg.
    Blend in flour mixture at low speed alternately with milk until well blended.
    Stir in vanilla and rhubarb.
    Turn into a greased and floured 9 x 13-inch pan.
    Sprinkle with remaining sugar and cinnamon.
    Bake at 350\u00b0 for 40 to 45 minutes.
    May sprinkle with powdered or regular sugar.
    Serve with whipped topping, ice cream or just plain.
