Mushroom Stroganoff - cooking recipe
Ingredients

1 Tbsp. olive oil
1 large onion, chopped
1 clove garlic, minced
1/2 lb. thinly sliced mushrooms
3 Tbsp. lemon juice
1/2 tsp. dried tarragon
1/2 tsp. paprika
1 c. vegetable broth or water
1 Tbsp. tahini
1 tomato peeled, seeded and diced
8 oz. artichoke noodles cooked according to pkg. and drained
2 Tbsp. minced fresh parsley
Preparation

Saute onion and garlic in oil until soft.
Add mushrooms and cook until they are soft.
Add lemon, tarragon, paprika and mix well.
Blend vegetable stock and tahini.
Pour over mushroom mixture and mix well; remove from heat, add tomatoes and season, if necessary, with fresh ground pepper and some tamari.
Spoon over noodles and garnish with parsley.
