No-Bake Blueberry Cheese Pie - cooking recipe
Ingredients

1/2 c. sugar
2 Tbsp. cornstarch
3/4 c. cold water
1 pt. blueberries
1 pkg. light cream cheese
3 Tbsp. powdered sugar
1 tsp. vanilla
1 (8-inch) graham cracker pie crust
Preparation

Mix
sugar and cornstarch in medium-size saucepan. Stir in water
until blended.
Add 1 cup of the blueberries.
Stir over medium
heat until mixture thickens and comes to a boil. Reduce heat
and
simmer 2 minutes, stirring constantly until berries release
their
juices.
Remove
from heat and stir in remaining berries.
Cool
to\troom
temperature. Beat cheese, powdered sugar and vanilla in bowl until blended.\tSpread over bottom of
pie crust. Cover with berry mixture. Refrigerate 2 hours or until chilled.
