Zucchini Casserole - cooking recipe

Ingredients
    4 c. zucchini, sliced or chunks
    2 eggs or Egg Beaters
    1 c. low-fat mayonnaise
    1 c. chopped onion
    1/4 c. chopped green pepper
    1 c. grated Italian cheese
    salt and pepper
    2 Tbsp. bread crumbs or crumbled potato chips or Ritz crackers
    garlic salt
    parsley
    pinch of dill
    1 pkg. sliced frozen carrots
    1 Tbsp. butter or oil
Preparation
    Cook or steam zucchini until tender; drain.
    In large bowl beat eggs, stir in mayonnaise, onions, green peppers, herbs and add zucchini.
    Turn into greased 1 1/2-quart baking dish. Sprinkle with crumbs and dot with butter.
    Bake at 350\u00b0 for 30 minutes.
