Cajun Fish - cooking recipe

Ingredients
    3 to 5 lb. whiting headless fish
    1 Tbsp. seasoned salt
    1 Tbsp. black pepper
    1 Tbsp. red pepper
    1 Tbsp. paprika
    2 eggs
    2 c. yellow corn meal
    1 c. milk
    3 c. Crisco
    1 c. flour (optional)
Preparation
    Cut fins off thawed fish; split fish down stomach and remove bone.
    Wash fish and drain.
    Season fish with seasoned salt, black pepper, red pepper and paprika.
    Let stand for 1 hour.
    Heat Crisco in skillet.
    Beat eggs in a bowl; pour milk into eggs slowly and beat.
    Pour corn meal in separate bowl.
    Dip fish into milk, egg wash and immediately roll fish in corn meal.
    Place fish in hot oil.
    Cover pan with lid and let fry until brown.
    Turn onto the other side and brown.
    Return fish to first side and remove lid. When fish is as crisp as desired, remove fish from skillet and drain on paper towel and serve with side dishes.
