Coconut Chicken With Fresh Fruit - cooking recipe

Ingredients
    3 Tbsp. butter
    8 skinned and boned chicken breasts
    1/2 tsp. ground ginger
    1/2 tsp. salt
    1/3 c. flaked coconut, toasted and divided
    1 c. whipping cream
    3 bananas, quartered
    1 large papaya, peeled, seeded and sliced
    lime or lemon wedges (garnish)
Preparation
    Melt butter in a large skillet over medium-high heat.
    Add chicken and cook 4 minutes on each side or until lightly browned. Sprinkle with ginger, salt and 3 tablespoons coconut; add cream. Cover and cook over low heat for 10 minutes.
    Arrange chicken, bananas and papaya on a large serving platter.
    Pour warm sauce over chicken and sprinkle with remaining coconut.
    Yield: 8 servings.
