Ingredients

3 1/2 c. zucchini (4 medium)
2 eggs, beaten
1/3 c. flour
1/2 c. grated Parmesan cheese
1/2 c. grated Mozzarella cheese
salt and pepper to taste
small amount olive oil
8 oz. tomato sauce
1 c. grated Mozzarella
dried oregano
any other toppings you would like
Preparation

Let the lightly salted zucchini stand 15 minutes.
Squeeze out the excess moisture.
Combine zucchini with 2 beaten eggs, flour, Parmesan, 1/2 cup Mozzarella and a little salt and pepper to taste. Spread this mixture into a greased baking pan.
Bake in preheated 350\u00b0 oven for 20 to 25 minutes or until the surface is firm and dry.
Spread a very small amount of olive oil over the surface and broil 5 minutes.
