Cream Of Chicken Soup(Servings: 8) - cooking recipe

Ingredients
    1 whole hen
    3 carrots
    2 onions
    1 whole leek
    1 rib celery
    2 cloves garlic
    6 mushrooms
    1 lemon
    thyme to taste
    bay leaf to taste
    salt to taste
    2 Tbsp. flour
    1 stick butter
    1 1/2 pt. heavy cream
Preparation
    Cut the hen.
    Peel, wash and cut the vegetables.
    Saute slightly the vegetables and the hen.
    Add the flour and pour water to cover.
    Add the spices.
    Let cook.
    Strain through a China cap (small hole strainer).
    Add cream and butter to sauce.
    Season to taste.
    Garnish:
    Julienne strips of hen and mushrooms that have been sauteed slightly in butter.
