Foil Wrapped Ginger Chicken - cooking recipe

Ingredients
    2 chicken breasts, (10 oz. each)
    1/2 c. minced green onion
    2 Tbsp. minced preserved ginger
    1 Tbsp. lemon juice
    2 Tbsp. soy sauce
    1/4 to 1/2 tsp. crushed red pepper
    salt and pepper
Preparation
    Flatten chicken.
    Place each half on a piece of heavy-duty aluminum foil to enclose it.
    Sprinkle chicken on both sides lightly with salt and pepper.
    Combine onion, ginger, lemon juice, soy sauce and red pepper in small saucepan.
    Heat, stirring, about 1 minute.
    Spoon mixture over chicken halves evenly.
    Close foil tightly.
    Bake at 400\u00b0 for 12 minutes.
    Serve with rice.
