Fire Cracker Corn Salad(Makes 5 Servings) - cooking recipe

Ingredients
    1 1/2 c. vegetable juice
    2 Tbsp. chopped fresh parsley
    1 medium clove garlic, minced
    3 c. cooked rice
    1 can canned whole kernel corn, drained
    1 (4 oz.) can jalapeno chilies, drained and chopped
    3 Tbsp. chopped pimiento
Preparation
    In a medium bowl, stir together vegetable juice, vinegar, parsley and garlic.
    Add rice, chilies, corn and pimiento.
    Mix well.
    Cover.
    Refrigerate at least 4 hours or until ready to serve.
