Mini Salmon Patties - cooking recipe

Ingredients
    1 pt. salmon
    4 eggs
    1 clove garlic, minced
    breadcrumbs
    1/4 c. diced celery
    1/4 c. diced onion
    1/2 tsp. thyme, crumbled
    oil for frying
Preparation
    Drain salmon; flake with a fork.
    Add 3 eggs, garlic, 1/2 cup breadcrumbs, celery, onion and thyme.
    Mix well.
    Form into 12 small patties.
    Beat remaining egg.
    Brush egg on both sides of each patty.
    Coat with breadcrumbs.
    Refrigerate 1 hour or overnight.
    Fry patties in hot oil until golden.
