Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant, peeled and diced
2 medium onions, diced
1 stick margarine
1 c. milk
1 c. yellow cheese (Velveeta), diced
1 tsp. baking powder
1/4 lb. crushed crackers (saltines)
Preparation

Boil the eggplant and onion for 10 to 15 minutes in salted water and drain.
Add margarine.
Now add milk, cheese, baking powder and cracker crumbs.
Place in casserole and bake 1 hour at 350\u00b0.
