Beef In Potato Shells - cooking recipe
Ingredients

3 large baking potatoes
1 Tbsp. margarine or butter
1 lb. ground beef
1 (16 oz.) can whole tomatoes (undrained)
1 envelope taco seasoning mix
1/2 c. shredded Cheddar or Monterey cheese
1/3 c. sour cream
2 green onions (wild), chopped
Preparation

Bake potatoes at 475\u00b0.
When done, cut potatoes lengthwise in half.
Scoop out all but 1/4-inch shell.
Brush inside and outside of shell with melted butter.
Place shells, cut side up, on ungreased cookie sheet.
Bake, uncovered, until edges are brown, 15 to 20 minutes.
Cook and stir ground beef in skillet until brown; drain.
Stir in tomatoes and seasoning mix.
Break up tomatoes.
Heat to boiling; reduce heat.
Simmer, uncovered, stirring occasionally, for 20 minutes.
Spoon beef into shells. Sprinkle with cheese.
Heat just until cheese is melted.
Top with sour cream and onions.
