Chicken And Pecans - cooking recipe

Ingredients
    2 chickens, cut up
    salt and pepper to taste
    4 Tbsp. butter
    1/2 c. finely chopped onions
    1/2 c. finely chopped celery
    1 bay leaf
    1/2 tsp. thyme
    1/4 tsp. grated nutmeg
    2 whole cloves
    1 bottle (3 c.) dry red wine
    1/2 c. heavy cream
    1/2 c. chopped pecans
    6 chicken breasts, boned and halved
    1/3 c. olive oil
    2/3 c. lemon juice
    1 Tbsp. Dijon mustard
    1/2 tsp. ground black pepper
    1/2 tsp. salt
    2 medium onions, chopped
    2 cloves garlic, minced
    2 Tbsp. brown sugar
    1/4 c. clarified butter *
    1 oz. shiitake mushrooms, soaked in warm water for 30 minutes
Preparation
    Assemble this recipe the night before in order to give the chicken time to marinate.
