Sauerkraut Salad - cooking recipe
Ingredients

1 can sauerkraut (some people rinse, I prefer it as it comes)
1/3 c. minced celery
1/4 c. chopped onion
1 small jar pimentos
1/3 c. sugar or sugar substitute
Preparation

Do not drain kraut.
Mix all ingredients. Store in refrigerator for about 8 hours to get your best flavor. The longer it sits, the better the flavor. Some people think it's a different type of slaw.
The pimento, while it has its own flavor, makes it very pretty.
If more sweetener is needed, use your own measurements.
Serves 6.
