Meatless Chili - cooking recipe

Ingredients
    2 Tbsp. oil
    1 1/4 c. chopped onion
    2 cloves garlic, minced
    2 Tbsp. chili powder
    1/4 tsp. oregano
    1/4 tsp. cumin
    2 c. diced zucchini
    1 c. diced carrots
    2 lb. ripe tomatoes, cut into eighths
    1 (16 oz.) can chickpeas, drained
    1 (16 oz.) can kidney beans, drained
Preparation
    In a large saucepot, heat vegetables and oil over medium heat. Add onion, garlic, chili powder, basil, oregano and cumin.
    Cook, stirring until onion is tender.
    Add zucchini and carrots, cook stirring 1 or 2 minutes.
    Stir in tomatoes, chickpeas and kidney beans.
    Bring to a boil.
    Reduce heat and simmer 30 minutes to 35 minutes.
    Makes 6 servings.
