Sweet Potato-Carrot Cake - cooking recipe

Ingredients

3 eggs
2 c. sugar
1 1/2 tsp. baking soda
2 tsp. cinnamon
2 tsp. vanilla
1/2 tsp. salt
3 c. sweet potato pancake mix
1 1/2 c. oil
2 c. grated carrots
1 (8 oz.) can crushed pineapple with juice
1/2 c. nuts, chopped
1/2 c. coconut
2 Tbsp. orange rind

Preparation

Mix eggs, sugar, soda, cinnamon, vanilla, salt and oil. Stir in pancake mix; add remaining ingredients. Bake at 350\u00b0 for 1 hour in a large Bundt pan.
