Calabacitas Con Carne - cooking recipe
Ingredients

1 1/2 lb. round steak, cubed
2 Tbsp. shortening
1/2 c. water
5 medium zucchini squash, diced
1 medium onion, sliced into rings
2 Tbsp. shortening
2 c. corn, drained
1/2 c. chopped green chile
2 tsp. garlic salt
1 tsp. salt
1 c. Cheddar cheese, grated
Preparation

Brown steak in shortening.
Reduce heat, add water, cover and simmer until tender, about one hour.
Add more water as needed. Saute squash and onion in shortening until tender.
Add corn, green chile and seasonings.
Add meat and meat stock to vegetables. Simmer about 20 minutes.
Add grated cheese.
Stir to melt.
Yields 8 servings.
