Apricot Chicken - cooking recipe

Ingredients
    3 chicken breasts, cut in 1/2
    1/4 tsp. pepper
    1 1/2 Tbsp. mustard
    1 tsp. salt
    1/4 c. plus 2 Tbsp. margarine
    1/4 c. plus 2 Tbsp. apricot preserves
Preparation
    Sprinkle chicken with salt and pepper. Place skin side down in greased 9 x 13 dish. Combine margarine, preserves and mustard in small saucepan. Cook over medium heat, stirring constantly, until smooth. Pour over chicken. Bake, uncovered, at 350\u00b0 for 1 hour, basting and turning once.
