Kate'S Vegetable Soup - cooking recipe
Ingredients

2 c. leftover roast beef
2 c. cooked potato chunks
2 c. shredded cabbage
1 can peas, drained
1 can corn, drained
1 can cooked carrots, drained
1 can kidney beans, drained
1 onion
1 small green pepper
1 can green beans, drained
2 to 3 cans tomato juice
Preparation

My mom combines all of this and simmers it all day in a large soup pot.
The longer it simmers, the better it is.
