Calamai-Coconut Pudding - cooking recipe

Ingredients
    2 c. cornstarch or rice
    1 coconut (milk only)
    4 c. water
    sugar to taste
    2 drops lemon extract
Preparation
    Mix all ingredients in a pan and heat over low heat; stirring constantly is necessary until mixture comes to a boil and thickens.
    Pour into shallow pan and cool.
    Cut into squares or wedges and serve.
    This will serve about 10 people.
