Red Beans And Rice - cooking recipe

Ingredients
    2 c. dried red beans
    1 ham bone
    1 Tbsp. dried green bell pepper flakes
    1 Tbsp. dried minced onions
    2 tsp. seasoned salt
    1 tsp. sugar
    1 bay leaf
    1/2 tsp. dried minced garlic
    1/4 tsp. cayenne pepper
    1/2 tsp. celery seed
    1/4 tsp. crushed red pepper
    1 tsp. ground cumin
    1 c. uncooked long grain rice
    1 lb. spicy smoked sausage, sliced into 3/4 to 1-inch pieces
Preparation
    Wash the beans.
    Place them in a Dutch oven and cover with water.
    Soak overnight.
    Drain.
    Add the ham bone and seasonings to the beans.
    Add water to cover the beans.
    Cook, partially covered, over medium-low heat for 3 to 4 hours.
    Cook the rice, according to package directions, 30 minutes before serving.
    Add the sliced sausage to the beans 20 minutes before.
    Salt and pepper to taste.
    Serve over hot rice.
    Yields 4 to 6 servings.
