Hoecakes - cooking recipe
Ingredients

1 c. self-rising flour and corn meal
2 eggs
1 Tbsp. sugar
3/4 c. buttermilk
1/3 c. plus 1 Tbsp. water
1/4 c. oil or bacon fat
Preparation

Mix well all ingredients together, except the oil.
Heat the oil for frying in a large skillet over medium heat.
Drop two tablespoons of hoecake batter into skillet.
Brown 2 minutes per side until crisp.
Drain on paper towel.
