Chicken Monterey - cooking recipe

Ingredients
    4 (6 oz.) chicken breasts, boned and skinned
    1/2 c. Zesty Italian dressing
    1/2 c. margarine
    salt and pepper to taste
    1 lg. onion, sliced in rings
    1 lg. green bell pepper, in strips
    8-10 oz. mushrooms, sliced
Preparation
    Salt and pepper to taste.
    Fix 2 cups Minute rice, using regular or wild rice.
    Place in baking dish with the rice on the bottom, grilled chicken breasts next and then cooked vegetables. Top with good helping of Monterey Jack cheese.
    Bake or microwave only long enough for cheese to melt.
