Quick Chicken Casserole(Makes 6 Servings) - cooking recipe
Ingredients

2 Tbsp. onion, finely chopped
1 c. diced, cooked chicken
1 1/2 c. cooked rice
1/2 tsp. salt
1 Tbsp. lemon juice
1/4 c. water
2 c. crushed potato chips
1 c. sliced celery
1/2 c. chopped walnuts
1 can cream of chicken soup
1/4 tsp. pepper
3/4 c. mayonnaise
3 hard-cooked eggs, sliced
Preparation

Saute onion and celery in butter.
Mix chicken, celery, onion, nuts, rice, chicken soup, salt, pepper and lemon juice.
Mix mayonnaise with water and add to chicken mixture.
Gently stir in eggs.
Turn into a greased 9-inch square pan.
Top with potato chips.
Bake at 450\u00b0 for 15 minutes or until bubbly.
