Carrot Muffins - cooking recipe
Ingredients

1 c. flour
1/4 c. brown sugar
2 tsp. baking powder
2 beaten eggs
1 c. finely shredded carrots
1/4 c. cooking oil
1 Tbsp. lemon juice
Preparation

In mixing bowl, stir together flour, brown sugar, baking powder and 1/2 teaspoon salt.
Make a well in center.
Combine eggs, carrots, cooking oil and lemon juice.
Add all at once to dry ingredients.
Stir until moistened.
(Batter should be lumpy.) Fill greased or paper baking cup-lined muffin cups 3/4 full. Bake at 375\u00b0 about 25 minutes.
Makes 8 muffins.
