Bran-Apple Muffins(Low-Fat) - cooking recipe

Ingredients
    1/2 c. buttermilk
    1/2 c. prune or apple juice
    1/2 c. bran cereal shreds
    1/2 c. rolled oats
    1 tsp. baking soda
    2/3 c. pitted prunes
    3 Tbsp. water
    1/2 c. packed brown sugar
    2 large egg whites
    1 Tbsp. molasses
    1 c. flour
    1 c. peeled and grated apple, spooned, not packed, into cup
    1/4 tsp. salt

Preparation
    Preheat oven to 375\u00b0.
    Coat twelve 2 3/4-inch muffin tin cups with vegetable cooking spray; set aside.
    In a small bowl, combine buttermilk, prune juice, bran, rolled oats and baking soda; set aside.
    In the container of food processor, combine the prunes and water.
    Pulse on and off until prunes are finely chopped.
    Combine prune puree and sugar in a mixer bowl; beat in egg whites and molasses.
    Stir in buttermilk mixture, flour, apple and salt; blend thoroughly.
    Spoon batter into prepared muffin tin cups, dividing equally.
    Sprinkle tops lightly with additional rolled oats.
    Bake for 20 minutes.
    Makes 12 muffins.
