Pot Roast - cooking recipe

Ingredients
    2 1/2 lb. beef roast
    1 c. water
    1 c. tomatoes, chopped
    5 carrots
    salt and pepper to taste
    2 Tbsp. fat
    3/4 c. black coffee
    1 onion, sliced
    2 c. potatoes
Preparation
    Brown meat on all sides in hot fat.
    Pour water and coffee over roast.
    Add salt and pepper.
    Bring to a brisk boil.
    Reduce heat and simmer 40 minutes.
    Add tomatoes, onion and carrots.
    Simmer 20 minutes.
    Add potatoes and simmer until vegetables are tender.
