Cactus Cones - cooking recipe
Ingredients

2 lb. ground beef
1 egg, beaten
1/2 c. milk
1/2 c. uncooked rice
1/2 c. chopped green pepper
1 (1 1/2 to 1 5/8 oz.) pkg. taco or enchilada sauce mix
2 tsp. salt
3 Tbsp. cooking fat
1 (16 oz.) can tomatoes
1 (13 1/2 oz.) can tomato juice
flour for sauce, if desired
Preparation

Combine ground beef, egg, milk, rice, green pepper, 2 teaspoons taco or enchilada mix and salt.
Shape meat mixture into 8 cones.
Brown cones on all sides in cooking fat.
Combine tomatoes, tomato juice and remaining enchilada sauce mix in deep pan.
Bring to a boil.
Place cones (pointing up) in sauce.
Cover and cook slowly for 1 1/2 hours.
Remove cones to warm serving dish.
Thicken sauce with flour, if desired, and spoon over cones. Makes 8 servings.
