Slim 'N Trim Macaroni And Cheese - cooking recipe
Ingredients

3 1/2 c. cooked, drained macaroni
1/2 c. chopped onion
1 3/4 c. low-fat cottage cheese
2 tsp. Dijon mustard
1 slice crisp cooked bacon
7 oz. sharp shredded cheese
3 Tbsp. chopped parsley
1/2 c. evaporated skim milk
salt and pepper to taste
1 slice bread, crumbled
3 Tbsp. Parmesan cheese
Preparation

Preheat oven to 350\u00b0.
In a large bowl combine macaroni, sharp cheese, onion and parsley. In blender combine cottage cheese, milk and mustard.
Process until smooth.
Pour over macaroni mixture and stir.
Add salt and pepper.
Turn into 2-quart casserole coated with nonstick spray.
Crumble bacon and mix with bread crumbs and Parmesan cheese.
Sprinkle over casserole.
Bake for 20 minutes.
Yields 8 servings.
