Zeppole - cooking recipe

Ingredients
    2 eggs
    1 c. flour
    2 tsp. baking powder
    1 pinch of salt
    1 1/2 tsp. sugar
    1 c. Ricotta cheese
    1/4 tsp. vanilla
Preparation
    Beat eggs slightly.
    Add remainder of ingredients and beat gently until combined batter becomes sticky.
    Drop by half teaspoon (push off batter with another spoon) into deep corn oil; heat to 375\u00b0, frying a few at a time, until Zeppole are golden brown, about 3 minutes.
    Drain on brown paper and roll in confectioners sugar.
    Serve at once.
