Mashed Potato Casserole - cooking recipe
Ingredients

8 to 10 medium potatoes
salt and pepper to taste
1 (8 oz.) pkg. cream cheese
2 eggs, beaten lightly
2 Tbsp. all-purpose flour
2 Tbsp. minced fresh parsley (optional)
2 Tbsp. minced chives or 1 small onion, grated (optional)
Preparation

Peel and boil potatoes until tender; drain and put in a large bowl of electric mixer.
Beat until smooth.
Add salt and pepper, then cream cheese and beat again.
Blend in eggs, flour, parsley and chives.
Beat thoroughly.
Turn into buttered casserole.
Bake at 325\u00b0 for about 30 minutes, until puffy.
