Broccoli, Tomato And Basil Frittata - cooking recipe

Ingredients
    1 (8 oz.) container Egg Beaters (equivalent 4 eggs)
    3 Tbsp. milk (whole or skim)
    3 Tbsp. Parmesan cheese, grated
    fresh ground pepper to taste
    3 Tbsp. olive oil
    1 medium onion, diced
    3 medium tomatoes, peeled, seeded and diced
    1 Tbsp. fresh basil, chopped or 1 tsp. dry
    1/2 c. sliced mushrooms
    1/2 c. chopped broccoli or zucchini
Preparation
    Preheat oven to 325\u00b0.
    Oil 7 to 8-inch baking dish.
    In large bowl, combine first 4 ingredients.
    Saute in oil for 5 minutes. Add tomato and basil and saute 10 minutes, stirring frequently. Add broccoli and mushrooms and cook 5 minutes more.
    Add this mixture to eggs and pour into prepared dish.
    Bake 15 to 17 minutes, until just set.
    Do not overbake.
    Serve immediately.
